Is Beef Stroganoff Healthy?

Of course! There are very few foods I would deem completely unhealthy and even then, that word is very relative. This recipe will show you how to make beef stroganoff with whole ingredients, no seed oils and no preservatives.

This recipe is easy to adjust to meet your exact macros. My partner (who is about half my size) likes to split these serving sizes in half so there are six total servings in this recipe and the macros are 36g Carbs, 14g Fat, 21g Protein at 370 calories. Feel free to adjust as needed for your meal prep.

Ingredients

  • 12 oz Top Sirloin

  • 1 Onion

  • 8 oz Mushrooms, Baby Bella

  • 4 Cloves Garlic

  • 1/4 cup Sour Cream

  • 2 TBSP Flour

  • 3 cups Beef Broth

  • 1 TBSP Dijon Mustard

  • 2 TBSP Worcestershire Sauce

  • 3 TBSP Avocado Oil

  • 1 Shot Brandy, optional (but is it really? No)

  • Salt to taste

  • Pepper to taste

  • 8 oz Egg Noodles

Directions

  • Slice mushrooms into 1/8” thick slices, the onion into 1/8” thick Juliens and mince the garlic
  • Thinly slice your top sirloin into about ¼” thick strips. 
  • Sear off top sirloin in a hot pan oiled in 1 TBSP avocado oil to get a good color on them. Don’t worry if they aren’t fully cooked yet, they will finish cooking later.
  • Remove beef from pan and add remaining avocado oil. 
  • Saute onions until softened, approx 3-5 min.
  • Add Mushrooms and saute for approx 3 min.
  • Add in garlic and saute for 1 min until fragrant.
  • Spoon flour over onions, mushrooms and garlic. Mix until no dry clumps remain.
  • Slowly add beef broth mixing to combine. Make sure there are no lumps of flour.
  • Once all broth has been added, add the sour cream, Dijon mustard, Worcester sauce, the shot of brandy and return the beef to the sauce.
  • Simmer over low heat, stirring regularly until sauce has thickened and add salt and pepper to taste.
  • Serve over egg noodles and enjoy!
