A Colorado classic and a sure hit at your next get-together (or if you’re like me, a great treat at the end of a week), this dip is packed full of flavor and protein. This is not a light saucy dip, this dip is mainly chicken and has the macros to prove it.
This dip is not for the weak of heart or weak of chip. Seriously, your chip will crack in half.
As always, I recommend cooking your own chicken. Season simply as the flavor will come from the buffalo sauce and ranch. If you want to use chicken breast, of course, this is acceptable and will make the dip lower in fat (macros for this recipe based on using breast). I do not prefer this as breast has a tendency to dry out, so I recommend thighs. If you’re in a pinch or are so inclined, a broken down rotisserie chicken is also suitable replacement.
A great alternative to chips in this dip is toasted baguette slices. They are hearty enough to support this heavy duty dip and offer a great crunch.
I highly recommend serving this dish with a spoon. Most chips will be too weak to actually dip into the dip without breaking. It’s best to just spoon the dip onto a chip and put in the extra effort.
For ranch and buffalo sauce, I recommend making your own, especially if you’d like to keep the ingredients fairly clean for this dish. My favorite buffalo sauce and ranch recipes were adapted from All Things BBQ, but I added a little heat with a habanero, changed up a few spices, used Frank’s, and ensured the mayo was made with avocado mayo to keep it on the cleaner side.
Buffalo Sauce Recipe
I always have some of this sauce in my fridge. You can find the full buffalo sauce recipe and instructions here.
Buffalo Sauce Ingredients:
- 2/3 Cup , Franks Red Hot
- 1 whole, Habanero, De-stemmed
- ½ Cup, Butter
- 1.5 teaspoons, Celery Seed
- 1 teaspoon , Worcester Sauce
- 1.5 teaspoons , Garlic Power
- ½ teaspoon , Black pepper
Ranch Recipe:
Shelf-stable bottled ranch sucks. Once you try a homemade ranch recipe, you’ll never go back. Here is the recipe I like from ATBBQ; I use avocado mayo to make it a bit cleaner.
Ranch Ingredients:
- 1/2 cup sour cream
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1/4 cup parsley, minced
- 1 tbsp fresh chives, minced
- 1 tbsp fresh dill, minced
- 1 tsp lemon juice
- 1/2 tsp Worcestershire sauce
- 1 clove garlic, minced
- salt & pepper, to taste
